Will the scanner continue to work if you don't update the software every year?
Just trying to confirm that this tool isn't a "subscription" based tool where it will no longer function if you let don't update the software every year.

Yes, the tool will continue to work after the subscription has ended.
Bosch does offer a lifetime warranty for the tool if you choose to keep concurrent update subscriptions.
