A second accelerometer can be used to measure vibration at a second location and used as a comparion to help futher isolate the conern.
The interface allows measuring from up to 3 axis of each accelerometer but you do not have to use all 3.
You can use 2 accelerometers at two different locations to compare measurements are different locations. You could even use 4 and take a measurement from each corner of the vehicle if the concern is constant, meaning you cannot isolate area the vibration is coming from by turning, accelerating, or braking.
2 accelerometers can be used to measure from both sides of an engine mount to determine the effectiveness of the mount.
