can i use this amp probe with a vantage pro lab scope and to set it up

Yes. The probe has leads that terminate to bananas that will connect to the snap-on scopes and to most any DMM.
The 20A range on the probe can be used with the snap-on scope presets.
The 80A range on the probe you will probably have to manually do the math, since the snap-on scope presets are 40A or 60A.
